Turkey Stuffed In Portobello Mushrooms
Portobello mushrooms are particularly tasty when they are marinated. This food is low cholesterol, saturated fat and sodium. It is also a good source of dietary fiber, protein, vitamin C, folate, iron, zinc and manganese. It is also a very good source of vitamin D, thiamin, riboflavin, niacin, vitamin B6, pantothenic acid, phosphorus, potassium, copper and selenium.
When choosing the turkey sausage to fill the mushrooms, be sure to choose a brand without carbohydrate fillers and sugar.
Ingredients (Serves 6)
- 6 portobello mushrooms, each about 5 inches in diameter, stems removed
- 1/4 cup red wine vinegar
- 1 tablespoon finely chopped fresh rosemary
- Kosher salt
- Freshly ground pepper
- 3 fresh turkey sausages (about 6 ounces each), casings removed and meat crumbled
- 1 egg
- 1/4 cup freshly grated Parmesan cheese
- 2 tablespoons finely chopped fresh flat-leaf parsley
- 2 tablespoons chopped oil-packed sun-dried tomatoes, drained
- 1 tablespoon finely chopped fresh oregano
- 1 teaspoon finely chopped fresh thyme
- salad made from butter lettuce leaves and extra-virgin olive oil
Preparation:
- Preheat the oven to 375°F (190°C). Using a spoon, scrape the gills from the underside of each mushroom cap. In a bowl, whisk together the vinegar, oil, rosemary, salt and pepper to taste. Hold each mushroom over a large baking dish and spoon the oil mixture on both sides. Let the food marinate in the dish for 15 minutes. Drain the mushrooms and arrange, gill side up, on a baking sheet. Bake for 10 minutes until tender and juicy. Leave to cool.
- Turn off the oven. Arrange the broiler rack about 5 inches from the heat source and preheat the broiler. In a large bowl, stir together the sausage, egg, Parmesan, parsley, sun-dried tomatoes, oregano, thyme, salt and pepper to taste until well mixed.
- Divide the mixture into 6 portions. Spoon a portion into each mushroom cap, smoothing the filling to form an even layer. Place mushrooms on a baking sheet and broil for 5 minutes until the stuffing is golden brown, or until the sausage is cooked through.
- Serve the stuffed mushrooms with the salad.
